Haha! I was going to do a new post on this, but I knew someone must have done one mildly recently...

Mens Singles - At the moment Tanaka/Otani from the Fire Festival, but I'm getting the G1 soon plus the Chono/Nagata 60 mins, so I might change my mind.

Junior Singles - Liger/Kanemoto BOSJ, although I've heard TMIV/Hidaka from MPRO was very good too...

Mens Tags - Chono & Tenzan/Nishimura & Nakanishi from NJPW in June just over Misawa & Kobashi/Akiyama & Nagata from NOAH in February.

Junior Tags - Forget Toryumon, for me it's Liger & Anyone/Kikuchi & Kanemaru.

US Singles - Chris Benoit/RVD (Summerslam)
US Tags - Benoit & Angle/Edge & Misterio (No Mercy)

Chono v. Takayama from the G-1 finals was truly great...I just got Tenryu\Kojima in the mail today, so maybe that will beat it.
